Bethel's highly anticipated new restaurant that will be located at the former site of The Spot has finally arrived, as they've announced their official Grand Opening.

Next weekend, April 26 - April 29, 2019, the long-awaited eatery, Proof Bar & Cafe is gearing up for their Grand Opening celebration at 1 Front St.

The Spot at 1 Front St. in Bethel had a good 13-year run until it closed its doors in February 2017. Is Bethel ready for a unique breed of brewpub? Here's a little background:

John Schauster and Mike Boney created The Hop Knot chains in Middletown, Southington, and Storrs and now, they're bringing their pretzels and beer concept to Bethel. Three words on The Hop Knot website says it all: Pretzels, Beer, and Cocktails.

John Schauster has teamed up with Samantha Lupacchino to open Proof Bar & Cafe. Their mission is to not only turn Proof into a fun, casual evening eatery, but they also want it to be an easygoing lunchtime favorite as well. In their words, "Cafe by Day, Bar by Night." They plan on offering traditional warm pretzels, sandwiches, and desserts featuring fresh pretzel dough.

Let's talk beer. Proof will be featuring craft beers from all over the country including local Connecticut breweries.

The owners have been previewing various menu selections including a flatbread pretzel pizza and pretzel-wrapped oreo cookies.
